The best way is to run a hot bath, lots of soap and bubbles, then a nice shampoo and clean rinse. The turkey would also like a rub down. Sorry, couldnt help myself. i like to skin and then breast the bird. Cook the legs in a crockpot with broth & herbs, they become tender. Good luck. Woody

Remember, during the spring you have to leave the beard or one leg on the bird. During the fall, I filet the breast and remove the thigh meat and put in a baggy and then in freezer or cooler. During the fall, to avoid a ticket, I skin the bird, gut it, clean out the craw, and cut one leg and both wings off the carcass. I then put it in a cooler of ice. When I get it home, I filet the meat off the breast and cook it or freeze it.

Like others skin and fillet out the breasts. I usually skin down and take the leg/thigh quarters also. Boil the leg/thigh quarters for an hour or so and then pick the meat off the bone and use in turkey noodle casserole or turkey soup.

Guys, a thought on the tough parts of the bird, like the legs, could you make turkey burger out of them?
