    Need some advice about a little predicament

    I have 4 racks of baby backs that I'm taking home to put on the smoker. They are for tomorrows work bbq. Well we won't eat until around 3 and i can't take my smoker to work. I'm gonna smoke then at home tonight but my question is, since they will be done before eat time, can i wrap them up and stick em in the fridge? Will they keep thier tenderness? Can i just heat then back up? Thanks!

    Stop them about 30 minutes short, and heat them back up slowly, and they should stay tender. Just make sure they have plenty of juice still in the foil when you heat them back up and they should be fine.

      They will be good. They will not be exactly the same as you just pulling them off but they will still taste great. I did the same thing this week.

          you can heat them up in the morn or smoke them in the morn then wrap in foil and towels in a cooler.

              So should i heat them up in the foil with apple juice or wide open heat?

                Leave the juices in the foil when you heat them. Do not open them until you are ready to cut and serve them.
