Nasty tasting hog meat

    I have never had a bad one. Any size or gender I just shoot it, gut it, take it to the processor. I have even had 250lbs and up and they are all good.

      some good advise here I kilt on this weekend and have it on ice now. debating on weather or not to take it to a processor or cut 'er up myself

        I have one bad hog that I killed and that was a boar that was over 200 pounds. He stunk when I killed him, but we wanted to try it anyway. That is the only bad one I have ever had.
        I usually get a hog skinned and quartered as fast as I can.
        I have also heard of people rubbing the meat down with mustard before putting the seasoning on them. I have never tried this, but know people who swear by it. They said that the mustard takes the wild taste out of the meat.

          The admiral shot one one time at Granger and I packed out the meat and cooked it up and nobody ate it.

          I couldn't and even Mr Bubba who eats anything turned his cold wet nose away.

          That hog didn't weight 30lbs dressed.

          All I could figure was he had been living off acorns for a few months.

          I've had really big boars that tasted fine. Go figure.

            I find pigs easier to skin after they have been chilled in a walk in overnight... you can leave more fat that way.

            Deer are exactly the opposite.

                I guess I'm lucky. I've never had a wild hog that i've killed that tasted bad.

                1. Gut them as ASAP
                2. Get the hide off and cool down ASAP
                3. Make sure that the meat does not come in contact with any intestinal fluids.

                      I shot a small boar a couple of years ago and the meat had a nasty smell. I also shot a small sow the same day and that meat didn't smell and it taste alot better than the boar did. After smelling that meat i won't even clean a big boar anymore.

                          I think it has to do with how its cleaned, i wash them down right away. If It smells bad when you gut it out dont keep it.

                            I have also heard that if you shoot one after it gets warm out (like now) that the meat can go bad if you take it straight to ice?? BS or no? I don't know.

                                not watching what was done... Its hard to say what might have gone wrong if anything. I have never had a bad tasting hog... but I am a fat boy that loves him some BBQ. Here are some things I try to do.

                                1.Gut it as soon as found. Within 20 minutes
                                2 Pressure wash the hide.(I have used a car wash) Or at lease hose it down.
                                Boars pee on themselves. That is not a marinade
                                3. Minimal contact between hair and meat.
                                4. Sharp knife.
                                5. Gloves
                                6. One hand for meat, the other for holding the hide. Or use a second clean person for handling the meat.
                                7. I rarely keep any meat that was in contact with guts or a bullet (blood shot).
                                8. If anything looks wrong with the meat throw out that part. Had one that had a wound on the front leg.. I threw out the leg.
                                9. Cook the meat well.
                                10. I think bigger hogs taste better (even boars) because they have more fat on them. (little ones have little to no fat)
                                11. Pork does not improve from aging.

                                Dirt to ice within an hour.
