What to do in Maui/where to stay?

I am lucky enough to be heading to Maui for a week for a work conference and I decided to get there a few days early. The hotel we are staying at is too rich for me since I will be solo-any suggestions on where to stay for 3 nights and what to do? I would like some decent snorkeling and maybe fishing from shore.

We did a helicopter tour which was great, the sunrise at Mt. Haleakela was neat but I probably wouldn't do it again but we loved the downhill bike tour afterwards (many miles on the bike and almost no pedaling) eat at the Plantation House for brunch, rent a jeep and drive the Road to Hana and don't turn around at Hana just keep on going around the island the road is rough but no big deal in a Jeep.
