    Cooking backstrap, need to use some avocado's... how?

    well I am planning on grilling some backstrap tonight for dinner but I have four avocado's that also need to be used. Do you all know of any good way to incorporate them into the dinner meal? Thanks

    Maybe a grilled backstrap and avacado salad?

      If your grilling, DO NOT overcook, I'm talking 1-2 min max.. Rub the avacado on the steak.

        Mix them with some mild pace salsa, salt and citrus juice. Easy and delicious guacamole.

          Grill the avocados (halve the avocados, grill five minutes on the peel, flip and grill a couple of minutes on the meat, fill the seed hole with pico, serve in the shell).

            1 avocado
            1 tablespoon chipotle sauce (Tabasco or Louisiana)
            1 tablespoon lime juice
            ¼ cup parmesan cheese
            Salt and pepper

            1. Slice the avocado in half and remove the stone. P r i c k all over with a fork, or cut criss-cross patterns with a knife. This allows the sauce to penetrate the flesh.
            2. Pour the sauce over each half, then top with lime juice and salt and pepper.
            3. In the cavity where the stone has been, put a fourth of the cheese on each avocado half. Place under the hot grill for 2 minutes.
            4. Top with remaining cheese and grill for another 2 minutes until completely melted and avocado warmed through.

            Eat hot with a wedge of lime and chipotle sauce on the side!

                Nannyslayer, step three "put under the hot grill" is that in the grill or do you mean literally "under" the grill? I am working with a very basic cheap grill. Also going to try it with a roasted raspberry chipolte sauce since that is all I have but I think it will work well. thanks for the sugestions!

                    You can use on top of a grill.. or under a broiler. Sorry for the confusion.
