    Working on boat produced some dinner

    I needed to rewire a few things on my boat so my buddy tagged along to "help." I got everything done (which was very rewarding) and my buddy "helped" me by catching a ton of sand trout right in my boat slip. By the time I got done and looked up he had 21 on a stringer. All I could do was laugh. I do use them for bait and so I was very happy that he caught so many. So I grabbed a rod and decided to get in on the action. After we caught plenty I was putting them in zip lock bags and decided I would fillet 6 of the biggest ones and give them a try. I have always heard they are pretty good as long as you eat them fresh and do not freeze them. Well they turned out fantastic! Just wanted to share. Just goes to show you how we could be missing out on a lot of things if you don't give them a chance.

        Sand trout is mighty tasty. You can freeze it too. Same as speckled trout.

              I freeze them all the time. They are better if you vacuum seal them.

                  Sand trout are very tasty fresh and taste pretty much like specks. Actually if fried fresh, I don't think one can even tell the difference.

                  On the freezing part, sometimes they don't freeze very good as the meat can get a little mushy whenever you thaw it out. Not sure why, I think it has to do with some of the oils in the meat. Anyways, they will freeze much better if a vacuum sealer is used. I never freeze them. If I'm hungry for fish, I'll just throw a couple in the cooler for dinner.

                        Put them in water in a freezer bag and freeze them. I do this now with all the fish I catch. I was told about this by a charter captain. Thaw them out and they are as if you caught them that day.
