      Just make sure you cut off the musk gland right after you kill it if you want to eat it. The young ones are good.

        Kill them and eat them. Keep on ice for a week, brine for 24 hours, inject with Tony's, wrap in bacon and slow smoke for 8 hours. Dang good eating.

            I don't recommend doing this. The musk gland is in the skin and comes off when you skin them. Cutting it off is asking for trouble. If it goes wrong you might have to buy a new knife

              I would like to shoot a big one to have a full mount done. I know Marjo would love another pig mount in the house.

                I have eaten them as well I prefer to make them like chicken fried steak but fry onions at the same time, they are good.

                  We make ours into Carne Guisada. It is awesome. Just like any other game animal you have to take care of them properly. Old Fiesta Spice has a premix for carne guisada with instructions that are easy to follow. Once you make this you will never throw another javi out. Even makes big boars taste good.

                      I keep the population in check. When I bring people to the ranch that have never killed one I allow them to take one. Plus they make cool mounts.

                          It is a known fact that if going to eat you must cut the gland off the back as soon as you kill. If you dont the meat will be ruined.I have cut many glands off and never ruined a knife.
                          Now, for those that have never eaten a javi. They are awesome if cut all the meat off the bone and into one inch squares. Roll in milk and then flour. Your favorite spices. Then deep fry. Hmmm good

                            I will take my time staring at the herd to see which one I am willing to eat...but first..I must be in Mexico really far away from HEB, then I must be really hungry after a few beers, next, the cowboy has to be there to gut and skin it, then, after his wife makes carne guisada with the young famale javelina along with homemade tortillas...I will happily scarf it down everytime
