    Fried Catfish Recipe - Help

    I am going to have some friends over on Good Friday for a fish fry and I was wondering if anyone had a good recipe for seasoning catfish. If anyone has a good recipe and does not mind sharing it with me I would really love to hear what works for you guys.

    There were several recipe's and they were all good!

    Hopefully some of those guys will share.

      I lightly cover my fillets in mustard and then cover it with cornmeal and fry away. It's simple and good.

        Put fish in a bowl and coat with mustard and louisiana hot sauce, then coat it with louisiana seasoned fish fry mix. I know it sounds strange, but it is really good.

            My grandmother soaks her fish in regular mustard and seasoning salt and then rolls in corn meal and fries it.

                  That's the deal right there..........don't soak it in mustard though, just a thin layer.

                    Lotta ways to fry fish . Some gooduns right above. Regular or any kind of spiced mustared will do. Regualr mustard is good on cooked fish too.
                    Now, about them tators and jalopino hush puppies ..................

                      If you wanna get tricky....crush up saltine crackers in a ziploc and use in place of the corn meal, the same can be done with corn flakes, rice crispies, instant mashed potato mix(that one's real good), or a corn meal mix.

                        I coat in mustard, mix instant mash potatoe mix with Creo seasoning and then roll the fillets in that.

                          1 part Bisquick, one part Flour, Tony Chachere's to taste. Mix ingredients together, batter, and fry.

                              I'll use mustard too but I use seasoned flour instead of corn meal. The crust comes out really crispy and almost flakey that way. My only problem is I can't keep them on the plate long enough to actually sit down to a plate. It seems like they magically disappear as soon as they come out of the fryer.
