I am going to have some friends over on Good Friday for a fish fry and I was wondering if anyone had a good recipe for seasoning catfish. If anyone has a good recipe and does not mind sharing it with me I would really love to hear what works for you guys.

If you wanna get tricky....crush up saltine crackers in a ziploc and use in place of the corn meal, the same can be done with corn flakes, rice crispies, instant mashed potato mix(that one's real good), or a corn meal mix.Last edited by Dale Moser; 03-19-2008, 07:06 PM.

I'll use mustard too but I use seasoned flour instead of corn meal. The crust comes out really crispy and almost flakey that way. My only problem is I can't keep them on the plate long enough to actually sit down to a plate. It seems like they magically disappear as soon as they come out of the fryer.
