    Why doesn't bread mold?

    I have half a loaf of bread that is at least 2 months old (maybe more) that doesn't have a spot of mold on it.
    I remember when I was a kid bread would mold in a week or so if it wasn't eaten.

    I've read the stories about the mcdonalds burgers left out for months at a time and they still look good as new. Everyone hollers about them being chock full of preservatives and being bad for you.

    Looks like Natures Own Honey Wheat is just about the same.

    A little background, I live part time in an apartment in Houma,LA. I split time between here and Houston. I've had this bread so long that the cleaning lady threw out my lunchmeat!

    These tortillas were bought before Christmas. No mold on them either.

                              Same reason Twinkies have a 20 yr (exaggerated) shelf life!
