I use Klein's there. Must be quartered and they won't take hogs but just about anything else.

Did my buck and some elk for me so far this year. Good people.

Taylor Meat does a good job but they are pricey, thorndale is better.

taylor meats makes some darn good breakfast pan sausage

Thorndale Meat Market does good with everything else they do so I would imagine their processing is pretty good. If them and Taylor Meat do their game pan sausage with the same recipes they use for their regular pan sausage then I would say Thorndale is better. You might check with the Westfalia (sp?) meat marker location in Hutto. I am not sure if they do processing but everything we have had from there, mostly summer sausage and dried sausage, is pretty good.
