      Don't worry about a "right way" to cut the meat. I just debone then cut it in steaks or roasts or cube or whatever comes to mind. Believe me, when you start eating that nilgai, it'll be so good the last thing on your mind will be whether or not it was cut right.

        Cut it up last night. 17 Quart bags of steaks, 3 roasts, both tenders whole, and 40 pounds of grinding meat. Took me and a friend 5 hours. But after seeing how good the steaks look and how much I was getting, it was well worth my time! Santa needs to bring me a grinder and air tight machine for Christmas.......
