Just finished making and eating Redneck Cheese Steaks. Nothing like grilled onions thin sliced deer meat w/provolone cheese on a toasted hoagie. With a nice cold couple beers to wash it down.

I find that taking some of the hind quarter and slicing in really thin on my meat slicer works great for Redneck Cheese Steaks. That way you can save the back strap for steaks.
