    Hit the links yesterday! I was smokin'...

    Now that I've mislead all of you golf nuts....

    Me and the boys made sausage for the first time. Thanks to my 12 year old Josh's fine shooting last week we had the makings for some sausage:

    I had the hog casings soaking, cleaned, and ready:



    I put the boys to work on the grinder after we mixed and seasoned the meat:



    Then we got busy makin' links:





    After a few hours of pecan smoking on the pit we moved them to the oven to finish them out. We went out for a movie and to look at Christmas lights and came back to beautiful perfection:

    Happiness is a full freezer and knowing you filled it yourself!

        Well...the pictures got all messed up but you get the point.

        Finatic.....I used a seasoning from a company in Huntsville, tx. Can't remember the name but someone on here recommended it and I found it at a shop in houston. Used 50/50 with venison and pork. Seasoned/cured and mixed in a mixer

        Ground it once through the biggest plate I had. Then reground it through the same plate into the casings. Slow/low smoked with pecan wood for 2-3 hours and then moved it to the oven. When the links were pink/red all the way through they were ready. Immediately submerged in cool water to stop the cooking and wash off the smoke. Pat dried and wrapped in freezer paper. It was my first time and I was very pleased with the outcome!

              Subject like was pretty funny! Had me ready....I have passed on all the rifle threads, sighting in guns and stuff and they really don't bother me at all, but I was ready to take you to task about talking GOLF....

                          I'm experimenting with chilli right now, but sausage is next on my list. I almost passed this thread up, then I saw Chew name on it. Figured I see you field dressing something on the 15th hole. You got it right on that freezer filling part.
