          Guilty. Doesn't take much equipment to make steaks, sausage, and jerky. Eating a venison burger right now. Yum! I dont trust processors to give me back MY deer.

                  I process everthing except hamburger. I usually take hamburger taylor meats to grind it. Have then add some Bacon tips. If you can manage to take in a few deer at a time it is cheap, just have to pay for grind fee.

                    Although I enjoy the convenience of a "meat processor", I do most of my own deer, pigs, turkey, ducks, and any thing else I decided to eat. I've got a meat band saw, and two grinders. I love all my deer ground. And can make some pretty good jerky if I may say so. But I just can't seem to get making any kind of sausage taste right from pigs or deer. So I've got two processors for that when I want it.

                      I have processed my own for 29 + years. Only paid 1 time and swore I would never do that again....
                      Not much to it and I can knock iot out really quick.

                        Yup, bout 5 years now. Like Skinny said 4-5 deer plus a pig or two gets deep.

                        Additionally I take pride in producing a quality product. It's lots of work but something that I enjoy in Jan or Feb.

                          To me the sausage (Deer) is the easiest part. I mix mine 50 -50 deer and pork shoulder. I then use Hi Mountain seasonings. Run it through the grind and then put it on the smoker.. Nothing to it.

                            Yup!!! Pride is a big part of it for me...it's kinda like a seasonal hobby.

                              I've been wanting to try my hand at sausage. But I've never had the gumption to do it. I've watched my father in law make some German style smoked sausage. But I haven't done it.
