    Today's lunch!

    Ahhhh fried squirrel and roux gravy!! You can find the detail's in the recipe forum! I'm just letting it continue cooking in the pot for another hour or so. The gravy really thicken's up as it continues cooking and you stir it around. That breading come's off and really add's flavor!

        Man, that looks good! Sure brings back memories!! My Momma made the best squirrel dumplings on the planet... My wife, bless her heart, has tried for years to get the hang of good firm lolled out dumplings, but she's just not there yet! We used to save the heads to make dumplings with... those and the old tough ones with those big "knots" on their rear ends around the tail... a good indication of age and toughness... Young, tender ones, we'd cut up and fry just like you have pictured. Fried squirrel, sawmill gravy, and hot homemade biscuits is dang hard to beat!!

                Not just yet, had these in the freezer from a recent trip to Leakey, but come Oct 1st you can bet I'm gonna put some more in a pot!

                    Same out in Leakey, I try to kill them everytime I go throughout the year. I wish TPWD would do it here in Liberty county!

                      Mmmm mmmm, I actually went squirrel hunting this past Saturday morning with my dad. Cooked them up almost just like this on Sunday. Turned out awesome! Looks great!

                          I used to hunt them with a passion, almost like they needed to be removed from the earth. Then I started seeing snakes, big snakes, and spent too much time looking down to hunt them.
