That is a congo eel. I found one last year in a dried up duck marsh. Google "congo eel" and see some pics very similar to yours. Creepy little suckers!!

This is it. They're in every ditch and hole in southeast Texas. Caught hundreds of them when I was a kid. Slimey suckers!

We had a stock tank in Corpus that was loaded with those things. Siren salamander or mud dog. I took one up to high school and kept it in a aquarium and fed it liver for several weeks. We caught one on a trot line once that was about 3 feet long....they are slimey.
