What you are looking for is what they usually call "green" peanuts. At least that is what they call them where I am from (Northwest, FL, just south of Dothan, AL). We usually pick them up in the Fall, as they are being picked, then freeze what we don't boil to keep them green. I had half a bushel, until my kid unplugged the deep freezer.
There are several different techniques. I boil mine in pot on a fish cooker. Others use a pressure cooker which cooks them considerably faster.
Cover the peanuts with water. Start of with about 1/2 cup of salt per gallon of water. It's an art, so you might have to hone your recipe a couple of times. It usually takes at least two to three hours on the fish cooker to get them to the tenderness that I like. You will have to add water throughout the process.
The key is to test them after a couple of hours for tenderness and when they get as tender as you like kill the fire and let them sit for several hours. While they are sitting in the brine test them for taste and when they get to the saltiness you like take them out of the water. With my recipe (salt/water mix) I usually boil them for three hours (starting at 7pm) then let them sit over night. But be careful, if your mix is stronger than mine they might get too salty sitting for that long.
So, what is most important to me is that you test tenderness while they are boiling and for taste while they are sitting. I have seen where people keep adding salt during the boiling process to try to get the taste right only to end up with a heck of a mess.Last edited by Nate Riley; 04-30-2012, 10:12 PM.
