Tresspassing Question

I can tell you I have a small creek that runs through my prop and if I find someone on it or anywhere - they will be held at gunpoint until he Sheriff arrives.

If it is defined by the state of Texas as a navigable waterway then you have the right to walk the riverbed, whether it is dry or flowing. What is the name of the creek?

has to be a navigable waterway, so yes, you would be tresspassing

More than likely it would be trespassing. Seasonal creeks rarely get classified as navigable.
