Hey guys, we've got a cookoff this weekend and the team member who always does our chicken has left the team due to medical issues, leaving me and my buddy to handle the chicken in addition to brisket and ribs. I'm a brisket man, and my body does ribs better than anyone I've ever met, but we're both clueless on the chicken. We can marinate it starting Friday night, and have to have it ready for turn in at 1:00 pm Saturday afternoon. Normal turn in box is one "show piece" typically a leg quarter or half chicken that looks really nice, then one bite sized piece for each judge. A show piece and 15-20 bite sized pieces is pretty common, so we normally use boneless/skinless breasts and thighs to make the cutting easier....so, anybody got any good recipes for me?

This isn't a cook off style smoked chicken, but it's great for for feeding people during the cook off. Good luck brother!!!!
