As far as cleaning, split hide perpendicular across middle of back, insert fingers and pull apart. It's like taking off a sock, hair will be on the inside.
Langston32- regardless of the method I use to skin them, I always ended up with a few stray hairs that I could never seem to remove from the meat. One day, I decided to try something, and I added a few drops of liquid dish soap to a bucket of water and dunked the squirrel in it before skinning it. The soap breaks the oils down on the hair, allowing the hair to become waterlogged, and then it won't stick to the meat when you skin them. I've been doing this for about 20 years now, and it works great!
