    Cold? Raining? Brisket it is!

    Pellet grills do have their advantages. It’s been on since 6:45, just got it past the stall.

    It’ll be good to go tomorrow after it finishes and rests.

      what temp are you rolling with??

        Smoke was 190° until I got it to 160.

        We wrapped it about 20 minutes ago and I kicked it up to 240°. It’ll hit 205 in a few hours, then we’ll let it rest for 2-3 hours.
