    Black nodules in hog meat - safe to eat?

    I shot a medium sized hog and took off the back leg to cook but noticed this in the fat. Anyone know what this is? Should I even bother with cooking it?

    why would you even consider eating those black nodules?




    just remove them and eat the rest.

        I think most hogs are just nasty. Even pen/farm raised. But I eat pork, just not pork that looks like that.

        Chunk it and go get a Whataburger.

          This...cut it out and eat the rest. I find fatty tumors and stuff in all the deer I clean. I cut em out and eat the rest

            It is hard to tell for sure from that picture but it looks like the lymph nodes I find in all hogs and deer. They are in a fat pocket that I would cut out anyway in the round so they just get removed during the trimming process

                      I ran it by a friend who is a veterinarian and also a PhD in Wildlife Disease--lymph nodes--cut 'em out and go ahead.

                        This, the meat looks fine, definitely lymph nodes, maybe some type of injury or infection, but if the meat doesn't look bad or smell bad, I would eat it.

                          Seems like the consensus is they are glands or lymph nodes. I have cleaned a lot of hogs but this was the first time I have seen this.
