OK I built a hunting lodge on our new ranch, we decided on a commercial type kitchen, all the equipment is restaurant grade, we bought a 60 inch gas range, it has 6 burners, 24 inch griddle and two ovens, it has a total of 10 pilots, they are not auto light, in other words they burn 24 - 7 unless you shut them off. The problem with that is now you would have a live burner that will only light if you manually light it, I did the math on how much propane the pilots lights would use a month, if I figured it correctly it is close to 100.00 a month. I am installing a couple of carbon monoxide / harmful gas alarms in the kitchen just in case some one turns a burner on and does not light it, what would you do, keep all pilots lit or just light the burners manually when you need them ? I also thought about installing a gas shut off valve at the stove but that is going to be a little bit of a chore plus it would not eliminate the chance of a burner being turned on by a child or someone just not paying attention.

The hood does not have the gas alarm but I bought two units that plug right into the wall.

My water heater, in the home I live in, is the only thing that the pilot light runs 24/7. Except, my Dearborn heater pilot light runs during the winter. I shut it off in the warmer months. The pilots on my stove have been shut off for 35 years to save on gas use. It's a bachelor thing, learned from my Grandfather. We have one just like you describe in our house. My wife keeps 2 pilots lit and 4 pilots off. There is a little screw you turn to shut the gas off to that burner and neither the pilot or the burner works. If a kid accidentally turns on the knob, no gas comes out. That little screw is also how you adjust your pilot to get a clean, blue flame as well.
