I do some hay and cow/calf. I would probably stick with Hay production. Or run feeder stockers that you can cut loose every 3-4 months and time it where you dont have to buy hay. If you are having to buy alot of hay or dont have enough land to produce your own to supply what you are running it makes it tough to justify i think.

To get started I’d probably go with bred cows, pairs, or 3-in-ones.
Is the whole place grazable, or just the Bermuda patch? That affects stocking rate—a lot.
If you’re buying hay for livestock on pasture to make it through winter (not talking about snow days, etc), you have too many and probably are losing money.
