The safe method is to cook it like pork, and it tastes very similar to pork in my opinion. I would personally throw it either on a smoker, cook it like pulled pork, or crock pot, and turn it into a stew. The first way, you will definitely taste the meat, the second not so much.
Another option, you can kill Trich and also not cook it to 165, there are explanations all over the interwebs about it. Lot's of folks do that with turkey, chicken and pork. We've done it with turkey several times, it keeps a lot of moisture in the meat.
