    Never tried it but mesquitecountry posted these recipes years ago.


    I’ve tried plenty of his other recipes and they were great.

      Back in the day meridian meat locker did mine for me and it was the best I’ve ever had. Been on a search for good recipe ever since as I process my own now.

        I use the mesquite country ones. I have tweaked them over the years but chorizo from venison or wild pork is what we make the most. When I get to my computer this evening I can send you my tweaked version.

              I’ve bought this from Amazon, definitely add the vinegar like it states. Or I was going to experiment and put cholula in place of the vinegar

                  I made the mistake of reading the ingredients on a pack of chorizo my wife got at Kroger.

                  Salivary glands and lymph nodes put chorizo on my no-fly list.

                        Haven’t made my own yet. Have Kubys in Dallas make mine every year out of ducks and geese. We argue that they are throwing the birds away and using pork.
