Gut and quarter in less than an hour

    I hang mine by the back legs and can have it in the cooler in about 20 minutes. Skin it first, then gut and let gravity assist you.

        OP, im much like you sir. Just can’t do it as fas5 anymore either. I still gut on the ground. To me it is so much easier and cleaner. once gutted and after about a 15 min break, I will hand from the back legs to quarter.

        I am looking into building a skinning/gutting rack though. Having to go all the way to the ground to gut sukks these days. Kinda like this one, also there was a TNH’er that had one in their pics as well I liked (might be able to search).

          We used to hang them from a tree limb by the head, skin the neck down far enough to get a big nut, (like a hitch ball nut), and tie a rope around the skin with the nut in it, pull the hide off with an ATV winch or the truck. Easier to do with the winch if you’re alone, remote in one hand , knife in the other to make relief cuts as needed. I start at the top, neck meat first, then shoulders, backstraps, then hams and tenders. We gutted all of them in the field beforehand. There is no telling how many deer I skinned and quartered in the 18 years I had a lease in Runnels County. In the beginning I had customers hunting and I gutted, skinned, and quartered all of them. I’m pretty sure some of them didn’t even know how to!

          Now, as This Lady Hunts and Gumbo Man pointed out, I AM OLD, so I gut in the field, and carry to the processor. From any of the three places I hunt I can be at my processor in thirty minutes or less. My buddy’s son killed one yesterday, and we both went over there to help him with the drag out and gutting chores. When we got to an open spot, they held the front and rear legs and I gutted the buck in probably ten minutes or less. We loaded him up and off to the processor. They charge for skinning but in the great scheme of things that’s a paltry sum compared to what we spend hunting. I’ll gladly pay $25 instead of skinning and quartering at 77 years old.

              I leave the guts in the rib cage. If I have an air compressor handy, I make a slit on each hind quarter while it's hanging by the legs and shoot air down inside the skin. Makes skinning a deer like pulling a shirt off. Grab all the meat you want bs, tenders, etc drop the rib cage minus the shoulders and neck roast then lop off the legs from the hind quarters.

                        The tailgate of the truck is the easiest for gutting, if a table or cradle is not around. You can also skin one side, then the other, on the tailgate.

                          Gutless method for us and an elk can get quartered in less than an hour, deer easily under an hour.
                          We hang with the hide on if cold enough, if they have to be skinned add about 30 minutes to the process for an elk.

                              Gutless. I load on my tailgate and quarter it up in less than an hour. Learned how to do it elk hunting and to me its way better and quicker than gutting, skinning ,etc.....

                                Like I said, a lot of money has been taken. My favorite used to be when someone was a repeat customer and when the new client started spouting off it was impossible, to see the repeat guy's eye light up ! My hands aren't as strong as they used to be. I had carpel tunnel surgery on my right hand and need it in my left, but I'm still pretty fast if the situation calls for it. Sharp knives are a must !! I have gone to the Outdoor Edge replaceable blades and a good fish filet knife.
