I ran an Express from one member (never got the screen name) to BillyBa and made the drop off today. He handed me some stuff from Arnold Deer Processing in Hempstead and spoke pretty highly of it.
We haven’t had a chance to check it out yet because we’ve only had it for a few hours, but he highly recommended them should we ever need something taken care of. Get with him if you want more details.
Smittys that DB suggested is where my dad gets most of his meats and other grilling stuff. However, we are not a fan of their sausage. His hunting buddy does like it though and I believe he takes his deer to them.
We use M5 Sausage Co out in Waller. I can’t remember how the exact change of hands went, but they used to be over off Steubner airline right by Hooks airport. Think it was sold to someone else, then sold again but they kept the same recipes. Something like that. Bottom line it’s a sausage WE like, everyone is different, and we have been using that same “recipe” from one company or another for 20+ years. My dad just dropped a deer off to them this morning. When I was stationed in Georgia and processing my own deer I was trying to make my own sausage but couldn’t get it just right, he packaged up his seasoning mix and sold it to me so I could get “his” sausage recipe in Georgia.
I used Fishers several times for both deer and FFA animals. I had a great experience with them every time. This was around 5 years ago, but they were great.

Smittys is great, I've used them a few times too, but they batch mix your ground meat. That may not be a deal breaker for you, but I'm always a little leery of it.

We have always brought enough for a batch and typically get out sausage made off season. And we just bring cubed meat. Just had 100 lbs done in early September. Usually a spring batch and then late summer.
Arnold’s is the best in my opinion and very fast. I searched a long time to find a breakfast sausage with the flavor & consistency I like & Arnolds nails it every time. I used to use Smittys and they’re ok but nothing special for the crazy prices they charge.
I used them once. Got my grind back full of gristle. No telling what it was ground with. Half the vac seal bags weren't sealed properly and sizes ranged from 12 - 20 oz per package. One and done for me, though, it's been few years since then.

M5 had their own place in pinehurst, they partnered with the OG at J&M by hooks to learn more tricks for a year. J&M went out and the folks of M5 moved to fieldstore. Still family owned and operated.
Smittys is good but Blake priced himself out of deer processing for me. We do get our mix etc from him to make our own. Another great place family ran. We buy ALL our steaks there

Arnolds in hempstead is quick, probally the fastest Ive seen. I normally grind my own burger but was short on time this year and didnt feel like messing with it. Took 44lbs of boned out deer. 22lbs of plain burger using brisket and 22 of bacon burger. Both mixed 70/30. Cost me 190.00 bucks!!!! Its been 6-7 years since Ive paid for any processing and that reminded me why.
