    Elk ribs and processing

    So how good are elk ribs off a bull elk? Obviously they probably are not as good as beef but how much better are they versus whitetail? Talk to me!

    And what's the best way to process the ribs off an elk? Bring a fine saw or?

    I've always found most of the bad gamyness in elk is in the fat, so I have never eaten elk ribs as traditional ribs. That meat gets trimmed and ground for me.

      We did some ribs over the fire on my first bull back in 2013. They were tasty but tough. Since then I’ve trimmed and ground my ribs for burger

        I've always trimmed and put with the other meat to be ground but I'm always in the backcountry.

              I only tried it once. The fat did not render like beef fat. I’d recommend cutting it all off if you want to use them on the bone.
