Your idea should work but I would probably just let them find the bait naturally.

My land owner is going to be mad when I start shooting his cattle and then letting them lay!
Maybe try putting a few small peices out and letting them find it first and then start hunting over it. A game camera may help pattern them as well.
Small stuff they are probably going to carry away which will make the window of opportunitty small.

The meat will rot in short order, and the coyotes will be able to smell it for miles.
The more it stinks.....the better.
The jars will allow you to put out a limited amount of bait at a time; plus you can keep a ready supply on hand, & you can just grab a jar or two and go.( Heaven forbid don’t break one of the jars Twztid!)
The rotting stench will keep them coming back day after day.
Just put out a jar early in the morning every few days to entice the coyotes to come out during daylight hours.
But If I did have a supply of carcasses, I would suggest this▼
Take any carcass/parts you can find, and run a piece of slick wire through it and then wire it to a t post so it cannot be dragged off.
In either case, keep feeding the same spot……..
