    Candied Jalapenos

    Anyone done this or have a recipe for them? My pepper plants are producing more than I can use right now. I've ate some candied jalapeños before and they were delicious.

      There is a recipes section/forum and I think I have seen candied jap recipes there!

        Too far and that doesn't help me with me extra peppers.

              Gotcha. I have always had a lot of extra peppers and have tried pickled canning a couple times now. I can never get the peppers to stay crisp, they just turn to mush.

              You might try searching ‘cowboy candy’ also.

                  Cowboy candy

                  3# Jalapenos sliced or chopped
                  2 cups apple cider vinegar
                  6 cups sugar
                  1/2 tsp Turmeric
                  1/2 tsp Celery seed
                  3 tsp granulated Garlic
                  1 tsp Cayenne pepper

                  Heat everything except the peppers until boiling.
                  Add peppers and boil for 6 minutes.
                  Ladle into pint jars, wipe rims, add lids and water bath for 15 minutes.

                    Maybe an overnight ice and salt water bath would keep them crispier?

                      Why do the peppers need to be cooked ? I make some hot / sweet / sour pickles and I do not boil them at all, call them sweethots. I have a few jars to do today, think i will grab some peppers and try them with my recipe, they will not be near as sweet as the candied peppers but sweet enough for me.

                        This is my recipe for Bread N Butter Peppers.
                        This may not be exactly what your looking for but they’re pretty tasty.

                        Recipe

                        Bread & Butter Peppers

                        INGREDIENTS
                        • 2 pounds jalapeño or banana peppers. (If using banana peppers then add 1 or 2 seeded and sliced, longways, jalapeños
                        • 1 pound white or yellow onions, thinly sliced
                        • 5 cloves of garlic per jar
                        • 1/4 cup pickling salt (can use Kosher salt or sea salt as a substitute, regular table salt has additives in it that will darken your peppers and make the color of the pickle juice muddy)
                        • 1 1/4 cup white distilled vinegar
                        • 1 cup apple cider vinegar
                        • 2 1/4 cups sugar
                        • 1 tablespoon mustard seeds
                        • 3/4 teaspoon celery seeds
                        METHOD
                        1. Prep the jalapeños: Cut the stem end off of the jalapeños. Then cut them in half lengthwise. Remove and discard the seeds and the ribs.
                        2. Salt peppers and onions, cover with ice, chill: Place the peppers in a large bowl. Add the onions and stir in the pickling salt so that it is well distributed. Cover the peppers with a clean, thin towel. Put ice over the towel and place the bowl in the refrigerator to chill for at 4 hours.
                        3. Rinse and drain the peppers and onions: After the jalapeños and onions have been chilling for 4 hours, rinse the salt off of the peppers and onions. Drain, and rinse and drain again.
                        4. Make pickling solution: In a 4 or 6 quart pot, put the vinegar, sugar, and spices. Bring to a boil to dissolve the sugar.
                        5. Boil peppers and onions in pickling solution: Add the peppers and onions to the pot with the pickling solution. Bring to a boil again.
                        6. Pack jars with peppers, onions and garlic: Watch the jalapeño peppers. As soon as they are all cooked through (you can tell because their color changes from a vibrant to a more dull green), start packing your canning jars with the peppers onions and garlic, using a slotted spoon to remove them from the pan.
                        Pack the jars evenly with the peppers and onions, up to about an inch from the top of the jars.
                        Then pour the sugary vinegar mixture over the peppers, until it covers them.
                        7. Seal and chill: Cover the jars and let cool to room temperature before chilling in the refrigerator.
                        If you are planning to store outside of the refrigerator or for an extended period of time, use canning jars. Sterilize your jars and lids first. Wipe the rims of the jars after you pack them with pickles. Process in a water bath for 10 minutes.​

                          All you have to do is slice them in rings, put a layer of peppers in a jar. Cover that level with a thin layer of sugar. Repeat until your out of peppers, sugar, or jar is full. Let set in the frig for at least 3 weeks. Enjoy. No need for for the vinegar, onions ,cooking any of that. There great.

                              Seems like a good problem to have - my vote is actually pepper jelly - hot biscuits - chicken sammiches - use cases are endless
