    Tri Tip, it’s what’s for dinner.

    I’d like to say “I’m sorry” for not posting pre-slice pics, but I’m not because I was fungry.

    That said, there’s nothing much better than some redneck prime rib for dinner and also knowing there’s enough for leftovers during the week.

    It's kinda like fajitas before they were popular and cheap. Too much social media drives the price up.

              It takes some experimenting and depends on what you’re cooking on, but the best way I’ve found is to smoke it for a couple hours low and slow. After that, crank the heat up and sear it.

              There’s the better part of two cuts pictured above. They were smoked on a pellet grill and then seared inside using a cast iron skillet. It turned out amazing.

                I bought two tri tips today for tomorrows games, I cook them over hot coals, move them to indirect heat to finish, you have to slice them in two different directions for the most tender cuts, making chimichurri , new potatoes and onions, asparagus and a salad, probably have a little red wine to go along with it.

                              We do those too. Sometimes the meat market has both out and sometimes only one or the other.

                              No picanha out yesterday when I went so that made for an easy choice.
