    Some redfish on the halfshell tonight, with some two step seasoning put that on a cracker dude!!

    I love these Dinner Tonight threads! I get the best meal planning ideas here. Yours, sir, looks delicious and, as it happens, we have redfish in the freezer that we need to eat.

            I love cheeky meat (puerco y res) but have never developed a taste for innards…of any kind. Would love your recipe for the beef cheek.

                      Funny you should say that, Tim. We watched Goonies as a prerequisite last night. Laughed as hard as we did years ago!. We visited a few of the places where Goonies was filmed…and also the school where they filmed Kindergarten Cop with Arnold Schwarzenegger.

                          We are still in Portland visiting or son, DiL, and grandson. Actually, Dee did not eat any of this tray. She had two crabcakes. My son, DiL, and I were the only ones who ate this until we were almost sick…a good sick. My grandson stayed home with his girlfriend ​​​​​​. I just finished a peanut butter/jelly sandwich and going to bed…satisfied!!!

                            I did. Tripa hasn't quite made the rotation at my house.

                            Beef cheeks are simple. Rub with SPG, smoke or grill around 250 for a couple of hours, place in a foil pan with Goya Mojo Criollo, cover and cook for another 2 hours or so. Enjoy. The hardest part is trimming the cheeks. I usually buy from a local butcher pre-trimmed.
