    B-B-B Bird is the word

    Smoked a pair of whole chickens for dinner. Soaked in a brine solution and then let them bathe in the smoke for 4 hours… and they are tasty!

    second bird will be used for King Ranch Chicken Casserole and Buffalo Chicken pasta later this week

    The only thing better than a bird that's been brined is a brined bird that's been smoked, and yours look delicious, sir! Love your plans for the leftovers, too.

      Try making chicken salad with smoked chicken.
      my favorite for leftover smoked bird when I have any.

          This was a more complex flavor profile than I usually make in a brine. It was titled “Meat Church Chicken Brine,” though I didn’t find it on their official website so I have my doubts.

          it was a mixture of water, apple juice,
          lemon juice, soy or teriyaki sauce, Worcestershire and wing sauce, seasoned with salt, brown sugar, minced garlic, and Meat Church’s The Gospel all purpose seasoning.

          it was really good and I’ll for sure mix it up again.

            You’re right, it sounds really complex. I’d always heard that anything other than salt in a brine is useless as sodium is the only chemical that affects the osmotic process. I’m not so sure this is true, though I wonder if it helps the other flavors travel through the cell walls where they might otherwise not be able to do so without it.

            Either way, your brine sounds interesting and I plan to try it.

              I found “Meat Church Bird BaptismPoultry Brine” on Amazon for $22. Looks like it is enough for 2 1/2 chickens.



              It has a 5 star rating. I'm sure it is great and I would love it, but I can't see spending $8 worth of brine on a $7 chicken.

                  Those look awesome. I love smoked chicken. Meat Church has a chicken injection powder that works really well too. I've added some seasoning to that a time or two as well.
