    How long ?????

    How long do you guys keep your deer packed on ice before processing yourself? I always keep packed on ice 5 days to bleed meat good but have been told by some that they go longer. How long is to long? What do you guys do?

    I put mine (quartered) in a plastic tray like busboys use at a restaurant and put it in the 'fridge for 4-5 days, draining off the blood daily and rinsing the meat. I bone it out after 2 days but it sets another 2-3 days at least. I don't like to leave it on ice, and since I have room in the 'fridge, works good for me. If you want some of the trays, check with a restaurant supply house--Ace Mart in San Antonio carries them.

      The last one we did was killed at 6:52 in the am and was on the plate and in the freezer (packaged) by 6 that evening.

            I have never "aged" a deer and don't see the need to myself.

              Ageing is done by hanging. Packing in ice is a different story. I pack in ice to bleed the meat good. The meat will be sweeter and absolutely no wild twang at all

                Never had such a taste...and I have literally pulled straps off a doe and placed on the grill.
