Not just deer hunting but by far one of the best books I have ever read was "old man and the boy" by Robert Ruark. A book about life, hunting, fishing, and growing up. It will have you bursting with laughter and crying at the same time.
"Old man and the boy" is a great one. One of my favorites is "A Sand County Almanac" by Aldo Leopold. It's not really a deer hunting book but is about land and wildlife written by a man way ahead of his time.
Not specific to deer, but Roosevelts books called "Hunting trips of a ranch man" and "wilderness hunter" are pretty good. They have a combo book with both books in one.
