    Best recipe for a venison ham?

    I have in my freezer two hams I liberated from a doe I took in Sterling County earlier this season.

    I need a recipe -- a recipe that even a dunce could follow.

    I like to do a roast in the crock pot with Liptons onion soup mix, onions, carrots, potatoes, and garlic. Mmmmmmm good!!

      Slice it up and fry it.

      I have yet to eat a decent venison roast no matter how it was cooked. They always turn out dry and tough as boot leather.

        Dooooo whuuuuuut? I have a method of cooking them on the smoker that is very close to brisket quality.

            Debone it and place it in a foil turkey pan. Smoke it for 4 hours. Then add half a small bottle of whorsteshire and two beers. Cover it with doubled hd foil. Scoot it closer to the firebox and crank the heat up a little. Simmer for 4 more hours. You can add potatos, onions and carrots for the last hour and a half.

            Ok, that is a BBQ secret I rarely give out...but I am not gonna tell ya what that will do to a hog hind qtr and don't even try it with a brisket.....unedible.

            Or what to do with the juice.....ancient family secret.

              Stuff with onions a garlic(slice little holes and stuff all over) put in pan cover with foil cook 4-6 hrs 325deg.

                  Inject it with Creole Butter and slow smoke it over some Hickory. I put a Tex-Joy Steak Seasoning rub on mine... Turn out GREAT

                    Use a roasting pan with a lid. Cut up a big onion on top of the ham, chop up a bunch of cilantro and throw it in there. Cook 350 for 4 hours.

                      I cook mine in a crock pot as well. Diffrent recepie. Put a dry packet of brown gravy mix and a very small packet of onion mix, small cream of mushroom can and a can of sprite. You can put all the extras mentioned above in (I always use potatoes, carrots never used garlic or extra onions). Sounds random but it is very good. All the ingredients make a very tasty "gravy" that I put on my roast when eating. Not dry or tough at all just dont overcook it or it will be tough as a boot (I know from first hand experience). By the way my kids love it!


                      I cut out the individual muscles from the hindquarters. Just use what you all will eat and leave the rest in the freezer. Obviously a entire whole hindquarter will not fit into a crockpot.

                        How long do you cook in crock pot?

                        Regular beef or pork roast seem to get more tender the longer you cook, venison evidently only gets more tough the longer you cook it.

                          I usually try to cook mine for around 6 hours (a little less for smaller amounts). I have found on deer that when cooking it in a crockpot you want it to be just barely done (not pink still obviously) dont wait and let it continue to cook like mentioned on beef or ham.

                          I cook a lot of deer roast in a crock pot. All of my deer hindquarters get cooked this way because my kids love it. It took me cooking up a couple of really bad overcooked ones to figure it out and stop cooking them so long. Sometimes I will come home on my lunch break and start it then and we eat on it at supper.
