    Question for the processors out there

    When making sausage with a wild hog do you need to grind it up a few days after the kill or can you freeze and grind later like deer. I'm under the impression you can't do this. If you can't, how long will a hog stay good on ice?

    I treat it the same as venison (deer meat). By definition meat from a wild hog is also venison.

      I have customers bring them in frozen all the time to add to their sausage and it always seems to taste the same as fresh wild hog to me. If it's a big rank smellin boar it's going to taste like a big rank smellin boar no matter what you do with it.... Just my $.02
