Showing how heat rises. Take two containers with room temp water. Pour in scalding hot water (dye it red for a better effect) and watch it rise.
Take ice cold water (dye it blue) and pour it in the other and watch the results.
Or you could do the classic, styrofoam ball Solar System!!That's never been done before

One of the best science projects I did was an "oil well". You take one of the large clear water service jugs (Ozarka/Culligan style). You fill it with various layers of substrate (sand, gravel, dirt, etc). Then you take some cooking oil and layer in your "oil". You run two glass tubes through a large rubber plug in the top down into your "oil". If you hook up a manual bicycle pump to one of the tubes, it will pump the oil out of the "well". It was quite informative when additional information about oil production was included. Not to mention it cost about $20 to make.
I also used a dog heart with a serious case of heart worms for a project on canine diseases. It was quite the prop back in the 80's.

Hydro electricity is what my oldest did his on on the 5th grade.
We toured a dam and he researched more information about it.
Then I helped him build a "city" on a 3' X 3' plywood. A dam with a electric motor (operated off a 9v battery) small gauage wires on dowel rods (make untility poles) and LEDs make the lights...
Prettry cool and he won first place with it.
Solar Electricity would be a good one too.

Experiments with liquid nitrogen, write up about how cold it is, how it's made, etc.
Show how to condense the vapor in your breath. Fill up a ballon, tie it off. Get liquid nitrogen at a gas supply store, pour into a metal bowl (yes). Rotate the balloon, as it shrinks (gas volume decreases with temp), water vapor liquifies. Put an onion in it, then remove with kitchen tongs and smash with a hammer. Lots of other fun things. The neighbor's problem cat is not a good idea for the school project.
