Cow elk weight question

My wife shot a cow elk this morning estimated by the guide at 2.5 years old. I don't know if they weigh them, and am curious as to how much a 2.5 yo cow elk weighs. Any one know?

On another note, what to process into? Jerky too expensive, so I'm thinking ground up and steaks? What are your recommendations?

I got hamburger, steaks, roasts, and jal/cheese summer sausage done with my elk this year.

I would keep as much meat as possible whole, not ground. Elk is better than beef.
