Unless its going to get below freezing and stay that way for a while (24 hours plus) I wouldn't worry about the holding tank. I would say that the piping (flex tubing) for your water lines is the biggest risk to breaking during a freeze. You can get an nipple (most rv stores have them) that you screw into your city water intake. Use that and a small portable air compresser to blow the water out of the lines. Open up the faucets farthest away from the inlet and pump air until no water comes out. Then open up all the other faucets and leave them open when you leave. Lines should be fine.

My camper is in the NW part of Throckmorton county and I always turn off my pump and open all faucets and work the toilet to get all the water out of the valve. I have never had and issue except last year when I didn't turn off the pump by mistake and left pressure on the lines and my hot water tank busted. My camper has been up there for the last 5-6 years with out any problems with this process.
