    3 deer processed in 5hrs.

    I am wore out. Took care of all of my meat so I can start killing again with a clear consionce. Did three deer ended up with about 65 pounds of lean red meat.
    Made 30.lbs of brats
    20 lbs of pepperoni
    20 lbs of pan sausage
    And about 20 lbs of jerky is stripped out and marinating.
    Now I have to smoke the pepperoni and jerky. Lots of work but it's gonna be awesome. I bet my bill would've been over 500 bucks at a processor.

        Sweet. 2 Years ago I shot a buck and decided to shoot a doe the next morning so I could just process them both at the same time. Lots of beer and 1:00 in the morning the next weekend I decided to never do that again.

          thats a lot of work i have done it before,, now i pick on bigger deer....


          luckily enough i got right at 90# off of the one i shot last week....

            Yeah when I hunted Sonora it was like that. These hillcountry deer are small. Took an old 8+yo buck that was maybe 100 pounds. Two does around 3 yo that were about 75lbs. The drought probably isnt helping.

                    So after field dressing the 3 deer you had 5 hours in skinning it quartering it and deboneing it and then a final product less the jerky dehydrated? That is some fast work.

                      It's lots of work. ...but worth it. Just processed my own and got 20 pounds of chile, 20 pounds of burger with venison beef mix, 25 pounds of keilbasa and jalopena cheese sausage, Two backtraps and two tenders. Took me about that amount of time with my wife in the kitchen in the way, but got er done. Smoking the sausage this afternoon.

                        How do yall make the kielbasa, the jalapeno cheese sausage, the brats, the pepperoni, and all the other kind of meat? Usually, we just make sausage, steaks, ground chili, ground burger, cubed stew meat, and jerky.

                        Do yall have a recipe for all the other meats, or just been doing it so long, it is second nature? Thanks.

                            I get all my recipes from lets-make-sausage.com So far, I've followed their directions and my is as good if not leaner than Kuby's in dallas (last place I took my deer to 3 years ago) Started to make my own.

                            I modified the king receipe and added jalapenos and that high temp cheese to it. ITS GOOOD
