      I cut out some of the bigger muscles off the hind legs. When I sliced the meat into pieces, I cut it against the grain. In the past I've made jerky out of back strap, but I enjoy fried back strap too much, so have been making it out of the hind legs. It really turned out great!

                I first cured the meat with tender quick for a few hours. Rinsed off the cure and seasoned with just a little salt (tender quick adds salt), light sprinkle of Aww Sh*t Seasoning, and coarse pepper out of the peppermill. Then for the marinade I just threw a bunch of stuff together.

                3/4 cup Worchestire
                1/4 cup Sweet Baby Rays Honey BBQ Sauce
                1/4 cup Italian Dressing
                2 Tablespoons Liquid Smoke (Mesquite flavored, not Hickory)
                2 Tablespoons Black's BBQ Habenero Pepper Sauce

                Turned out excellent with just the right kick!

                  If you don't want to mix and just want something off the shelf, Allegro Hickory Smoke is greatness and is available in most groceries stores on the ketchup/BBQ sauce isle including Walmart. I use it myself ....great flavor...

                      Yes Sir I'd have to agree! My girlfriend's dad is a distributor of the seasonings, so I stay stocked up! Good stuff!

                          10-4 on the 170 degrees and leaving the door cracked.

                          I do two racks of meat hanging between the wires and check at four hours. I pull the smaller ones as they dry faster and leave the longer ones if necessary. They all come out almost perfect and chewy. Good luck and may God bless.

                            Eating some for lunch now that i did last night. First time to use the oven method and you can bet it will not be the last. Turned out great.
