    Menudo

    Who here likes to eat menudo. I'm having a bowl with a cold bud light..

    I prefer mine hot and spicy. Makes a great dish around any campfire.

    I don't mind the broth so much but the tripe is like eating rubber bands stewed in chili. Yuck..

                I love it! I made about 20lbs of chorizo this morning. Gonna do some barbacoa and make some menudo real soon.

                  Trick

                  The trick to making tripas and the menudo skins I's to boil the meats for about 3 hours, that will make them soft.

                        I've been craveing some. Stripes has it on the weekend in our neck of the woods. If you are ever in Asherton there is a small store on the west side of town that makes good menudo. They cut it up in really small chunks. You'll need to add salt but its good. I've garnising with chopped serano in mine and it rocks.

                              My dad use to make the best menudo. I haven't had it very much since he passed away. That looks really good tho.
