    Wild Hog Jerky

    Anyone made it? We have a bunch defrosted and have sliced it for jerky and were thinking about putting it in the dehydrator.

    Is this safe? Any health concerns? Will the dehyrdator get hot enough to kill any bacteria?

        Technically a dehydrator is just a fan that dries the meat out.. You can use a box fan if you want. The small ones have heat because they cant move enough air.

              if your going to do it, i'd do it in the oven just to kill anything that might be harmful. i've had smoked and cured hog, but not jerky.

                I would think pork would be too greasy to make jerky, I don't think it would dry out enough and the fat would become rancid.

                  I've made it several times, has a little for fat but very good Jerky, just make it exactly like you do deer and you will be fine!

                    It makes great jerky. It does not matter how you make it as long as you can get it to 160 and hold it for a while. They way most people do it is the oven. Dont make it unless you can get it up to temp. There is stuff in hogs you dont want in you.

                      Agreed. Do not make it unless you get it to 160 degrees.

                          A dehydrator doesn't get hot enough. After dehydrating it, put it in the oven at 200 degrees for about 15 minutes and you'll be good to go.

                            Here you go!

                            Line the bottom of the oven with pans to catch the drips. Notice I used toothpicks to hang the meat from the racks. Also use a thermo because you have to crack the door to let it dry right. Dont trust your oven thermo. I would not use a dehydrator. They are designed more to make dryed fruit. If you are not using pork the dehydrator will work.

                              You want a bigger pan under the meat to catch drips. I ended up using 2 big cookie sheets but took them out for the picture. You can also line the bottom rack with foil. Good luck!
