I'm glad I brought my bag with me to work tonight! I got to digging in it to make sure everything was packed and that all was good when I came across my knives.

I haven't messed with them in 6 months (last time I used them). Sure enough, they all needed a few licks. So, guess what I'm doing for the rest of the night...

I wanted to post this so you all don't make the same mistake I almost did. I always have my diamond/ceramic sharpeners in my bag to sharpen between quarterings of multiple harvests so I would not have been stuck out but it sure is nice to pull out a knife and know it's ready to go.

I sharpen all my knives as soon as they stop cutting the way I want, even if I'm done with them. Lay night as a matter of fact, we had served the last plate of brisket and I went to sharpening my knife. The guys with me said "we're out of meat and everyone has gotten a plate, why you sharpening that knife?" "so it's ready next time."
