My wife and I were at Lowe's yesterday, and started looking at ovens. We need to get a convection oven since she does a lot of baking. I thought if there was a fan in the back, you were good to go. Sales guy was telling us about true convection vs just the fan etc. What do we look for? Model we were set on isn't true convection based on the Fridgidaire site. Need a 30" slide in oven/range combo under $1K. What is best? Any other info on the convection ovens is greatly appreciated.

Convection basically means that there is a fan circulating the air around.
True convection, or european convection, has multiple fans circulating air, normally one from the top and one from the back. And also has multiple heat sources.
The good thing about those are that you speed up cooking time and you get even browning. Mainly the bad this is they are convection all the time and you can't bake in a conventional oven (they can't be switched back and forth.)
We just purchased a double oven that is convection and conventional, and it is amazing. We also got a fridigaire model.
With your budget being around 1,000 dollars, I don't think you will be able to afford a true convection oven, look for a model that offers convection and convention in the same unit, and you will get lucky to find one of those. Convection ups the price of an oven, but it is worth every penny
