    Ok guys, hopefully i'm going after my first axis (doe), in a couple of weeks. From what I've picked up on, should I get most of it cut up for steaks & save the wt for burger & sausage? Thanks for the input!

    I get as much steak as possible with all the trimmings ground for hamburger (mixed with 10% tallow).

      X 2^ This is what I did with mine. 36lbs of steaks and 22 of burger. I kept the straps and tenders for myself to do on the grill.

        I cut all of it into steaks and give the trimmings to a friend for tamales

          agree with all the rest. get as many steaks as you can and the rest in hamb.
