I volunteered to smoke a quarter for a family get together today. I was surprised to find that what I thought was a quarter from this past season was actually a whole pig that weighed just under 20lbs.
This thing has been in my freezer for a while but was showing no signs of freezer burn in the cryo-bag.
I thawed it out and rubbed it down with Fiesta. I got my fire started after work yesterday and put it on the smoke.

This was my first smoke on my new smoker and I was working on another project while I was cooking and let my fire get away from me.

I got a couple hours of smoke on it then wrapped it in foil and added apple juice inside the foil. As my luck goes, my wireless thermometer crapped out on me so I decided to finish it in the oven.

Got it just about picked clean.

and ended up with a nice little batch of pulled pork.

juicy, tender backstrap and tenderloins:

I decided to go ahead and throw some appetizers together too!

just about ready to come off

all pulled off the smoke and ready to make a trip to the table
