    Axis deer processing...

    I'm invited on an axis deer hunt coming up in August. What is the best way to have one processed? I don't normally have whitetail made in to steaks because they are way too lean. I just have the backstraps and tenderloin cut up into small steaks and tenderized for chicken-frying or chopped up for stuffing peppers and stuff like that. And the rest made into ground meat and sausage. Anyway....... So this will be axis deer. I've heard they are way tastier and just a better meat all together. Suggestions on experienced axis deer eaters are much appreciated.

    Are you hunting around Kerrville? Take your deer to Woodbury's in Ingram. They do great processing. 24/7 drop off walk in cooler.

      I killed a doe that still had a little milk on her lips during turkey season this year and just went ahead and cut almost all of it into steaks myself. It is very lean but it is also very delicious with some seasoning.

        Way better than WT. The next one I get will be all steaks and trimmings will make beef tips.

          We kill so many a year, we process it like a whitetail with one or two of them into about 40 lbs of sausage....

            What spices do you use to turn deer trimings into beef tips..Had to sorry.

              The hunt is in Gonzalez. I have my own guy I use for processing. Thanks for the info though. So, sounds like I should get most of it made into steaks? I really want to have this done right. It ain't cheap!

                  $60 total at Midway in Katy. Shot my first one this year and had steaks/hamburger and stew meat made. I was told Axis is best straight with nothing added. The meat is flat out amazing. Puts deer to shame
